First edition of this RARE Civil War cook book.
The work begins with "Advice to Young Housekeepers and Their Household" outlining a "system and management of servants", a section on "washing, ironing, starching", and instructions on "carving". The book, published in the opening year of the American Civil War, goes on to discuss the elements of food and "marketing" (in other words, how to recognize if the food one shops for is fresh) and, in short order, gets to the most substantial section which introduces recipes for dishes including soups, sauces and gravies, beef and pork recipes, etc. The preparation and cooking of venison, lamb, and mutton are addressed and include calf's head and hashes followed by poultry. Breads, puddings and deserts are described as is the preservation of fruit and recipes using fruit. There is a section on making wines, table beer, fruit brandies and cordials as well as vinegar and syrups. Gardening plays an important part in this volume as well as suggestions for taking care of dairy cows and how to make butter. A final section addresses the preparation of remedies, the care of infants and cooking for invalids, something which would certainly prove useful as the country would now be engaged in one of the costliest and deadliest conflicts yet.
This rare book was reprinted by the publisher R.L. Shep in 1992 under the title "Civil War Cooking: The Housekeeper's Encyclopedia" with a note by Shep pointing out that Mrs. Haskell's "The Housekeeper's Encyclopedia" was concerned with women's lives in the period of the Civil War.
