Shanghai: The Commercial Press, Ltd,, 1916. The question of food and its preparation is the most vital First edition, first printing, of this rare cookbook with 1,000 recipes "adapted to the limitations of the local market, efforts having been made to exclude every recipe the ingredients of which can not be readily procured in China" (preface). Copies were sold in aid of the British Woman's Work Fund and other related charities. The 23 chapters offer directions on the preparation of everything from soups, macaroni, steak, and farinaceous foods to jellies, ice cream, cocktails, and candies, with the final section devoted specially to "invalid's food". This English-language volume was published simultaneously with a translation in Chinese (described as volume II), although whether they were sold as a two-volume set is unclear. Octavo. Original green cloth, spine and front cover lettered in English and Chinese in gilt, text on pastedowns. With half-tone frontispiece, 20 similar plates in text, pp. 26 of advertisements at end. Cloth faded and worn, contents generally clean. A very good copy.
