With mouth=watering descriptions of flavors, textures, and aromas, he makes the cook in all of us itch to get back into the kitchen. He enriches our enjoyment of eating by tracing the natural origins and cultural history of foods. By consulting mustard brokes in Saskatchewan, mussel growers in Maiine, ham curers in Kentucky, a spice merchant in Baltimore, and a walnut researcher in Bordeaux, he discovers trkuths about quality that are all but inknown in a time when fast foods and mass=marketing are the rule. This book is an appreciation of individual ingredients, the raw materials on which all great food depends.
