By consulting mustard brokes in Saskatchewan, mussel growers in Maiine, ham curers in Kentucky, a spice merchant in Baltimore, and a walnut researcher in Bordeaux, he discovers trkuths about quality that are all but inknown in a time when fast foods and mass=marketing are the rule. This book is an appreciation of individual ingredients, the raw materials on which all great food depends.
