The title, as the preface explains, is a reference to an antebellum street cry attributed to enslaved women "who once sang it through the streets of New Orleans, bearing steaming burdens of rice cakes in the baskets on their heads." Carmer, the volume's editor, was an author and accomplished folklorist, best known for "Stars fell on Alabama" and for his Rivers of America titles. Contributors include James Feibleman and Mary Willis Shuey.
