NY: The Viking Press, 1980. (USA) Book club edition. No markings, faint discolorations to leading edge of pages, thus Good in Good dust jacket with a touch of rubbing to edges of the dJ; DJ is in mylar sleeve. Llight tan boards, black spine, illus endpapers, xxxii, 592pp, index. 24 B&W illustrations. David took 5 years of research to write this almost scholarly but emmensely readable book on the history and traditions of bread baking and yeast cookery. There are informative essays on flour types, the merits of various ovens, the miracle of yeast. The 200 or so recipes have American equivalents and range from a six-page discussion of the basic loaf to the complexities of French puff pastry. In addition Karen Hess worked closely with David to prepare this American edition and has provided an introduction in which she praises the wrok as a model of "intellectual integrity".
