Chicago: National Dairy Council, 1918. Pamphlet. 23, [1]p., wraps. 7.25 x 5 in. Hole punched along spine and evenly toned, else Very Good. Early tract from the National Dairy Council (est. 1915) on the nutritional value of dairy products and their importance to national public health. McCollum is credited as the first to use a rat colony for nutritional research and as discoverer of Vitamins A and D. He was also very active in translating his scientific research for public audiences through articles for mass print magazines; the present speech comes at the tail end of McCollum's national tour to "talk to the women who are interested in home economics and to the women's clubs in the larger cities" (3). Brief texts about the National Dairy Council are printed on the inside front cover; among their several slogans: "Ice Cream is not a luxury-it is a highly nutritious food." Texts from the National Dairy Council prior to 1921 are scarce. Not in OCLC as of August 2023.
