An excerpt from de Pomiane's Radio Cuisine. Édouard de Pomiane (1875-1964) was the great French founder of "gastrotechnie", and professor at the Institute Scientifique d'Hygiène Alimentaire. Fine and largely unopened, in publisher's decorated wrappers; slight rubbing to top edge of wrapper, otherwise fine.
