The author has done much to promote the classical cooking tradition of Italy by gathering together as many recipes as possible from the homes of family and friends in 12 regions of Italy, and in each area she describes a landscape as well as local produce and culinary practices which contribute to the character of its cuisine, while her account of the preparation of the meal and the celebration itself, together with the outstanding photographs, provides a colourful glimpse of an Italian way of life rarely seen by visitors. The recipes are far cry from the glorified peasant cooking of the trattoria, and the secrets of this refined art have evolved over many centuries and have always been the preserve of family Cooks and matriarchs, with many of the recipes existing only in family cookbooks. The book is clean, there are no tears, and no writing, although I have seen two small spots that are possibly cooking stains.
