New York, NY: Merriam Company, 1895. First of this edition. Hardcover. Acceptable. Revised edition with supplements. Oilcloth covered boards, sound and liberally etched with use, evenly chipped at head, heel and corners. Front hinge is cracked but sound. A few pages are stained, some light water stain at front edge, not affecting the text. Pages are fragile but text is complete. This is a collectible working copy of a scarce early cookbook by the famous Swiss chef and author who was the first to systematically collect the recipes of the famous Delmonico restaurants in NY, where he worked for a period. The NY gastronomic empire was founded in 1827 by the brothers Delmonico, also emigrants from Switzerland .
