The objective of this work is to discuss and reflect theoretically on the aesthetic aspects of heritage gastronomy. An approach to aesthetic theories is achieved that allows a look at gastronomy as a heritage asset, based on a broad and non-restrictive vision of aesthetics, with the intention of deepening from the specific perspective of each discipline and each author. Hence, reflections on the aesthetic aspects of heritage gastronomy are presented and the foundations are laid for a visual aesthetic record .
