Second Edition. Hardcover. Original purple cloth binding. Several handwritten recipes and antique newspaper recipe clippings laid in, including Mrs. Standish' receipt for lemon cake and Tomato Mincemeat. The redoutable Maria Parloa's first book, named after the swanky Maine hotel where she worked as a cook. As outlined in her preface, part one of the book is for plain cooking, cooking everything that is within the reach of an ordinary family, while the second part contains directions for richer cooking. (Lobster is in the first part, which Parloa says must be boiled for one hour! Before cooling and then eating). Bitting, p. 356, Cagle 588. ; 8vo 8" - 9" tall; 234 pages .
