Montpellier: Camille Coulet, 1896. First edition. Quarto. Text in French. [8], 518 pp. plus all 46 full page photographic illustrations of wine cellars at the turn of the century in France. 108 textual illustrations. One photographic illustration with some edge wear to the outer edge. Simple brown cloth with spine lettered and rule in black. A very clean and complete copy if this scarce informational guide to the best practices in wine storage and fermentation. A highly thought of publication and still sought after today as it deals with all aspects of wine making other than the growing and harvesting of the grapes. Many of these vintners are still in business today. For example there is a palte and a diagram of the caves of Moet et Chandon. An agricultural engineer by training, Paul Ferrouillat was in turn tutor at the Montpellier School of Agriculture (1881-1883), professor at Grignon (1883-1887), professor of agricultural engineering at Montpellier (1887-1897), then director of the same school (1897-1919). He is also a corresponding member of the Academy of Agriculture and head of the Agricultural Information Office at the Ministry of Agriculture. He wrote several works, this being his most famous.
